Welllll Im a bit of a hard core carnivore......just get the outside a little crispy, sear the fat, dont worry about the interior, just as long as its not still frozen, a little warm...Moooooooo......I like to use pecan wood, on top of the charchol, let the flames lick up the grill and get the meat sizzlin!!
